Mutton cut shoulder is also known as square cut shoulder. Taken from the upper front legs, mutton shoulders get a lot of physical activity, which makes them tougher and packed with flavor. They also pack relatively more connective tissue, veins of fat, and ample bones, which add to the flavor and texture.
Typically cooked using moist heat, they are also an ideal mutton cut for stuffing. Their rich flavor tastes excellent when cooked as braised, grilled, or pan-fried mutton shoulder chops.
